Weekend Update. Days 5, 6, 7 + 8

Day Five: dinner and drinks with girls

Day Six: the outift that didn't really happen
Confession. I did not wear this out of the house but for five minutes. I made it halfway across the street and almost died on the ice, so went inside and changed into my flat brown boots. Winter sucks.

Day Seven: Superbowl Sunday

Last week, Katie posted her ketchup and mustard-inspired look and I decided to go for it too! Although, I've never seen pink ketchup....

Oh, and you're probably wondering how I managed to make it to day #8 when it is only the 7th of February, right? Twice now, I've worn two outfits in one day, so maybe I should start calling them 'outfits' as opposed to assigning them days.... hmmm.

And sorry for the long post. I guess I should start blogging on the weekends, huh?

Stripes Again. Day 4.

Day Four
I know I just wore this shirt last week for Everybody Everwear.... but whatever (I told you I was sort of obsessed with it). I wish I could tell you more about this necklace... but I found it years ago in my mom's jewelry box (which is more like a jewelry dresser because she has so much). It's a silver, heart-shaped watch surrounded by rhinestones. Yep, I said watch. What's even weirder is that she has I have a similar one in gold. 

I can't really believe it is Friday.... that snow day in the middle of the week really confused me. I don't have any plans for the weekend, which makes me sad.

Chili Willy

I am admittedly not a good cook, but this was stupid easy and it ended up being super super delicious. And just a note, I can't take any credit for this recipe, it was shared with me by my friend Molly. I actually cut it in half because I was just cooking for one. I got about six bowls out of it.

Ingredients:
two 16 oz cans of canned white beans
2 large onions, chopped
1 stick unsalted butter
1/4 c all-purpose flour
3/4 c chicken broth
2 cups half and half
1 tsp Tabasco
1 1/2 teaspoons chili powder
1 tsp ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
two 4 oz cans chopped mild green chilies, drained
5 boneless, skinless chicken breasts
2 c grated Monterey Jack
1/2 c sour cream

1. Heat a large skillet over moderately high heat and add butter and olive oil. Meanwhile, coat your chicken with salt, pepper and chili powder. Put them in the skillet and resist the urge to turn them over. Leave them for five minutes, or until nicely browned, then flip them. Leave them until browned and then flip them every few minutes until they are done.

2. Remove the chicken from the pan. When the chicken is cool enough to handle, shred it with your fingers and set aside.

3. While waiting for chicken to cool, cook the onions in the same pan with 2 Tbs of butter until softened.

4. In a heavy pot, large enough to hold all the ingredients, melt remaining 6 Tbs of butter over moderately low heat and whisk in flour. Cook the roux, whisking constantly, for three minutes. Stir in the onion and gradually add the broth and half and half, whisking the whole time. Bring mixture to a boil and simmer, stirring occasionally, 5 minutes, or until thickened. (It will be nicely and obviously thick.) Stir in Tabasco, chili powder, cumin, salt and pepper. Add beans, chilies, chicken and cheese, and cook over moderately low heat, stirring occasionally for 20 minutes. Add sour cream. I also added chopped jalapenos until it was the spicy-ness I desired.  You can always add more chicken broth if the consistency is to thick.

I may have fallen behind with day one, but I decided to pull double duty and wear two outfits in one day. I went to the movies last night (MoolahKing's Speech!) and changed out of my blazer and button down into something more comfortable. 

Oh, and I cheated. 

I wore my black (knock-off) Uggs from Target, which are not on my list. But can you blame me? I obviously didn't plan for the thundersnowstorm that was going to hit Missouri and I nearly ruined my boots trucking through the ice and snow yesterday.

Yesterday was day one of the 30x30 challenge and I woke up, got dressed, took some pictures and then looked outside. Dang. Ice everywhere.

So then I changed back into my PJs and sat in bed on my iPad all day (among other things) and decided my day one would have to be everyone else's day two.

The plus side of this do-over? I did a little editing.

Oh, and I wanted to share this picture too.... It's what I have to deal with every morning. Maverick thinks I want to play.

snOMG 2011

The Midwest is getting hit hard with snow and ice right now. The 'blizzard' that was supposed to hit St. Louis hasn't been as bad as I expected.... but still no fun.

Unless you're a kid who is off school today and is able to go sledding.

But as for the rest of us, today is spent working, and even though yesterday was a 'snow day' it was spent stuck inside the house because roads were too icy to leave. #snOMGfail
